more thai food and a little snow

I made thai red curry chicken for dinner Sunday night.
Very easy, and almost as good as the restaurant we went to on Saturday.


2 packages of thai red curry paste {I bought at Kroger}
2 cans of coconut milk {unsweetened}
1 1/4 lb chicken tenders, I cut up and pre-cooked
1 small can bamboo shoots, drained
a couple shakes of dried basil
{optional add-ins are onion strips, chunks of bell pepper, pineapple chunks}.

Follow directions on the packages of curry paste. We ate ours with quinoa instead of rice, and I topped mine with Sriracha hot chili sauce. The spicier, the better. So good!

And, this is what you do at 5:50 am when your child is an early riser, and the first tiny snow of the season is about to be melted away. Probably our only snow this year.



My sweet friends up North will laugh, but yes, we get excited about the snow here in Texas. It started falling last night about 7 pm, but we knew it wouldn't last long. I'm glad Boyd got to see a little of it.

We let the girls see it last night when it was falling hard. They were also so excited. Poor Sofia. She just knew she would see a ton of snow this morning. Daddy took her to school but I imagine she was disappointed!

I am SO going to make this! I have been dying for Thai food and from what I've heard, there are no really gos ones around here. This looks easy enough that I can make it, YAY! and I love quinoa, it's so good.

Glad Boyd got to see the snow. It's been rainy here for one week and I'm so over it. I know I will beg for days like this in the summer, but I'm over it. We had some sun for about 4 hours on sat so I took advantage and took pics for today's blog post.

How cute of Boyd in the snow!!!! I can't do curry. One of the very few flavors I do not care for. But it looks good!!

We saw it last night when it started falling but HG didn't get up until 11 today!

How exciting that Boyd got to play with some snow! That Thai curry looks so good-- I will definitely be making that soon :) I have a Thai Red Curry Chicken Soup recipe that's amazing...I'll send it to you when I find it!

Whoa that's early! But, I'm glad you guys got to enjoy a little snow :o) This has been such a weird winter. We've only had a foot or so of snow and had many days in the 30s and 40s...so weird but a nice change!

You're so adventurous with foods. I'm so lame in that category.

I have a yummy chicken curry recipe...but i had take out the curry so the kids would eat it. :(

oh my...it looks like oh-dark-thirty in those pictures. I don't know that I would be a happy camper being out that early.
